The Amapola Rico Taco opened its first restaurant in March 1975. The original name of this first location was Amapola Drive-In. It was an old A&W restaurant located at 1279 W. Baseline in the city of San Bernardino. Its founder is Rosina Gallardo, who migrated here from Zacatecas, Mexico. She brought with her, her delicious recipes and her strong desire to succeed.

That combination proved fail proof, and she quickly acquired loyal life long customers. Within two years she opened her second restaurant located at 596 N. Mt Vernon Ave. It was at this time that she added the word Rico Taco to the restaurant name. You could come here and feel like you were literally eating at a corner taco stand in Mexico. This restaurant was one of the few places where one could find authentic dishes like, lengua (beef tongue), cabeza (beef head), birria (goat), as well as the classics such as, carne asada (steak), and carnitas (pork). But of course, no one can argue that what put the Amapola Rico Taco on the map was our exquisite chile verde (green chile pork)!
