Purchased several years ago by Dan Wesolowski, the former Valley Tavern was completely remodeled and renamed for the tiny Cedar Hollow village where it has stood for more than 100 years. The bones of the old building remain the same, with three comfortable dining rooms including an enclosed sun porch plus a large bar area. But the new decor is impeccably fresh with hardwood floors polished to a high luster and walls brightened with the work of local artist Barbara Grant . The menu reflects the energy and creativity of the kitchen staff headed by CIA trained chef, Stephen Giuseppe. The cuisine is Continental American, but more accurately it should be described as delectable. Generous portions, friendly staff and the casual, fine dining atmosphere keeps people come back for more.
