Cold Avocado and Potato Soup

- 4 ripe avocados
- 2 chicken bones (to make broth)
- 1 cup of milk cream
- 2 medium potatoes
- 1 lemon
- Olive Oil
- Salt
- Parsley
Preparation:
To make the broth, use a pressure cooker. Then add the chicken bones with abundant water, two sprigs of parsley and a pinch of salt. Once the safety valve pops up, cook for approximately 5 minutes and let cool.
Aside, blend the flesh of 3 avocados, the juice of half a lemon, milk cream and chicken broth. Reserve.
Fry the peeled potatoes and cut into Julienne strips. Remove excess oil using paper towels.
Serve soup cold with chopped avocados, fries, and a sprig of fresh parsley!
