Ajíaco (caribean stew)

  • 3 pounds of chicken breast
  • 16 cups of water
  • 4 ears of corn 
  • 2 pounds of potato 
  • 1 pound of papa criolla 
  • Coriander
  • Guasca (gallant soldier)
  • 4 garlic cloves 
  • Green onion
  • 1 cup of capers
  • 1 ½ cups of milk cream
  • 4 medium avocados 
  • Salt and pepper 


First, peel the potatoes and cook in a pot with water. Cook with the chicken breasts and 3 chopped green onions for approximately 45 minutes. 

Remove the chicken and onions. Then add broth to the ears of corn previously cooked (may be stemmed or in slices).  Continue to cook on low fire (simmer) until it reaches consistency. Add a bunch of guascas a few minutes before removing from the fire. 

Aside, shred breasts and mix with the milk cream. Serve the sauce with the chicken, avocado, capers and a little coriander for garnish!
