Rosemary Roasted Turkey

- 1 Turkey (12 pounds)
- Meat thermometer
- ¾ Cup of olive oil
- 3 Tablespoons of chopped garlic
- 2 Tablespoons of freshly chopped rosemary and a few twigs to garnish
- 1 Tablespoon of freshly chopped basil
- 1 Tablespoon of Italian seasoning
- 1 Teaspoon of black pepper
- Salt and pepper to taste
Start by preheating oven to 325F. The first thing we are going to prepare is the dressing for the turkey. To do this, mix all ingredients (but not the turkey!) in a bowl and set aside.
Wash turkey with a little cold water inside and out. Then dry with paper towel. Removes excess fat and start to soften the meat. To do this, massage your turkey breast gently without breaking the skin for a few minutes (A bath and a massage…just like a spa!).
Use a basting brush or your hand, and a little dressing mixture under the skin of the breast (It should be between the breast and the skin). Brush the legs, thighs, and the exterior of the breast or skin. The skin of the breast must be firm. To help you, use a few toothpicks so the skin does not open and the mixture spills out.
Place your turkey in a baking dish on the rack (to aid degreasing process and brown better).
Add ¼ inch of water to the baking dish and bake for 3 to 4 hours or until the internal temperature (use a thermometer) reaches 180F.
