Lobster Cream Soup

  • 6 Cups of milk 
  • 2 Cups of water
  • 1 ½ Pounds of lobster meat
  • ¼ Pound of butter
  • 4 Tablespoons of wheat flour
  • 3 Tablespoons of onion 
  • 1 Large potato 
  • 1 Tablespoon of sherry
  • Nutmeg
  • 1 Cup of milk cream
  • Salt and pepper to taste


Cook lobsters in boiling water for approximately 3 minutes. Set broth aside. Remove meat from shell and mince. In a skillet, sauté finely chopped onions with butter. When transparent, add flour, salt and pepper, and stir for a few minutes. Add milk slowly (like when you make white (béchamel) sauce). Then add potato (peeled), boiled and pureed along with nutmeg to taste. 

Cook for 10 to 12 minutes on slow fire and stir occasionally. Finally, add lobster meat, milk cream without blending, a little cooking broth and sherry. Simmer for 10 minutes more minutes without boiling. Serve very hot! You can replace the lobster with shrimp or prawns if you prefer.
