Gourmet Polenta

Ingredients for 6 servings:

  • 2 Cups of whole milk
  • 2 Cups of water
  • 1 Teaspoon of kosher salt (thick)
  •  1 Cup of Polenta (thick corn flour) 
  • ½ Pound of Portobello mushrooms
  • 1 Large red onion
  • Fresh thyme
  • ½ Cup of blue cheese
  • ½ Cup of parmesan
  • ½ Cup of mozzarella 
  • Black pepper (freshly ground)
  • Vegetable Oil

Preparation:

Start by sautéing finely chopped onion in vegetable oil until slightly golden brown. Add thinly sliced mushrooms with thyme and set aside.
Apart, in a saucepan, boil milk with water and salt. When it boils, lower temperature and sprinkle polenta little by little, stirring constantly. Continue the cooking process (always stirring), until broth is thickened and smooth. 

Once ready, add cheeses and sautéed mushrooms. Season with salt and pepper to taste.

If you are unable to get polenta flour, you can buy the ones already made. Slice into round disks and place in a pan. Add a layer of polenta, mushrooms, cheeses and so forth. If you prefer a moister polenta, add white or tomato sauce.
