Chicken in Mango Sauce

Servings: 4 portions
- 4 chicken breasts (100 grams), skinless and boneless
- Fresh salt and pepper to taste
- 1 tablespoon of Olive oil
- 2 garlic cloves
- Ginger root
- 2 mangos
- 2 tablespoons of Apple cider vinegar
- 1 teaspoon of White wine
- 4 tablespoons of coriander
Preheat a skillet or griddle on high fire and add a little oil.
Once the breasts are clean (Skinless and boneless), season with salt and pepper.
Place in skillet on low fire and cook for 10 minutes on each side until fully cooked.
Remove from fire and keep warm in a dish with a lid, or cover with aluminum foil.
Apart, put on medium fire in a frying pan with little oil to sauté the garlic (chopped). Don’t allow them to burn because they can give a bitter aftertaste and this will ruin your meal. When they turn a little golden brown, add ginger. (A small piece – chopped).
Add the skinless mangoes (Chopped into small cubes), until softened. This should take approximately 4 minutes. Add vinegar and wine and season with salt and pepper to taste.
Finally, reduce fire and add chicken breasts for a few more minutes. You can serve the portions using coriander leaves (Finely chopped) for a decorative look.
